Heat a skillet or griddle over medium heat.
Butter one side of each slice of bread.
On the unbuttered side of two slices, layer McCall’s Irish Cheddar, apple slices, and crispy bacon. Top with remaining cheddar slices.
Close sandwiches with remaining bread slices, buttered side facing out.
Place sandwiches in the skillet and cook until golden brown, about 3–4 minutes per side, pressing gently.
Flip and cook until the bread is crisp and the cheese is fully melted.
Remove from heat, slice in half, and serve warm.
